cuir - bois - colors - stripe - abstract accueil l'alios histoire de l'alios gamme de l'alios collection permanente 1515 manu les marques de nos produits couteaux de poche couteaux professionnels rasage et cisellerie articles et accessoires culinaires les news plan contact contactez nous - mentions légales 2018 © autour du couteau réalisation vincent mallet & passionline alios's story : l'alios has become since its birth in 2009 the knife of our shop « autour du couteau » and more widely the bassin of arcachon. its creation results from the precise and dedicated work of robert beillonnet –twice credited with “best worker of france” in art o f cutlers- jacques boussarie –my predecessor- and myself gained a real passion for this knife. the shape of the blade is inspired by “french traditional knives” as the “langres”. the handle is straight like the “shellfish knife” for efficient handling. its originality is mostly with its rear rocking system which is due to the design of robert beillonnet. this system secures the blade in open position and allows a non-spring action during closure, normally found only in knives with forced closing action. this gives extra security during usage, one can find similar systems in certain garden knives of beginning of the 19 th century or in designs of certain american cutlers at the beginning of de 20 th century. it’ s presented in two sizes : 11 et 12 cm. for the handles, one finds the usual materials : horn (fair or dark), unpolished buffalo, ram, french precious woods (of many different types) and bone. we also make marquetry patterns depicting the famous “pinasse of arcachon”. for 2014, we are presenting handles with shells et small oysters imbedded in clear acrylic. the metal parts are laser cut at thiers by the gdd company. the blades for larger size are constructed from 12 c 27 steel produced by “sandwik” or in steel mox 27 co using a quality thermic treatment with cryogenie; its hardness gives a unique resistance to cutting. for the small size knife, we decided to exclusively utilize mow 27 co with 17,5 % chrome which gives an excellent resistance to corrosion (c-1,05/mo 6 1.2/v-0.1 and1.5 % of cobalt are de principal characteristics that provides a hardness of 60 61 hrc). for the large knive, a variation is made in ‘damas steel ab” from powders of metallurgy with twist design is also available. finally, the assembling is carried out manually in our own workshop. each piece is prepared and adjusted, the handle being made with great care. there used to exist in 1930 around 5 different cutlers, but today our shop “autour du couteau” is the last existing one and always had its own repair workshop. therefore, it appeared to me important to maintain and guarantee the assembly of l’alios giving to each knife a unique quality. christian moulin das alios messer ist seit seiner markteinführung 2009 das messer des geschäfts autour du couteau und im allgemeinen der bucht von arcachon geworden.. sein design ist das ergebnis einer engen und intensiven zusammenarbeit zwischen robert beillonnet, zweifachem preisträger des französischen handwerklichen wettbewerbs („meilleur ouvrier de france“) in der kategorie messerschmiedekunst, dem vorbesitzer meines ladengeschäfts jacques boussarie und mir. das messer genießt heute eine hohe beliebtheit. die klingenform erinnert an französische traditionsmesser wie das langres-messer: der griff ist gerade gehalten wie bei einer scheidenmuschel, dadurch liegt das messer fest und sicher in der hand. das besondere an dem alios messer liegt vor allem in seinem von robert beillonnet gestalteten kipphebel am ende des griffes, welcher die klinge im geöffneten zustand arretiert und beim einklappen den bei herkömmlichen springmessern üblichen spannungseffekt der rückenfeder vermeidet. dies gibt eine sehr große sicherheit bei der benutzung des messers. ähnliche mechanismen findet man bei gärtnermessern aus dem frühen 19. jahrhundert oder auch bei messern von amerikanischen messerschmieden des frühen 20. jahrhunderts. das alios messer ist in zwei längen verfügbar: 110mm und 120mm. für den messergriff werden gängige materialien verwendet: rinderhorn (hell oder dunkel), rohes büffelhorn, widderhorn, französische holzarten oder edelholz (verschiedene edelholzarten) sowie knochen. wir lassen auch sondermodelle mit intarsienmotiven anfertigen, die den für die bucht von arcachon typischen bootstyp, die berühmte „pinasse“ darstellen. 2014 haben wir erstmals griffe mit inkrustationen aus muscheln und austern in acrylglas anfertigen lassen. die metallelemente werden von der firma gdd, thiers, im laserschneidverfahren hergestellt. die klingen des 120mm-modells sind aus sandvik-stahl 12 c27 oder mox 27 co-stahl, der in einem cryo-verfahren wärmebehandelt wird; die stahlhärte verleiht der messerklinge einen sehr guten schneidwiderstand. für das 110mm-modell haben wir beschlossen, ausschließlich mox 27 co-stahl mit 17,5% chrom zu verwenden. diese stahlsorte weist eine hervorragende korrosionsbeständigkeit auf, sie hat folgende zusammensetzung: c- 1.05 / mo- 1.2 / v- 0.1 und1,5% kobalt (für eine härte von 60 61 hrc). für das größere modell ist zusätzlich eine variante aus pulvermetallurgischem damast-stahl von damas steel ab mit dem motiv „twist“ verfügbar. die messer werden schließlich in der ladenwerkstatt manuell montiert. jedes metallteil wird vorbereitet und angepasst und der griff sorgfältig verarbeitet. in den 1930er jahren gab es an die 5 messerläden rund um die bucht von arcachon. heute ist das geschäft « autour du couteau » auf dem cours lamarque in arcachon das einzig übriggebliebene, wobei es immer über eine reparaturwerkstatt verfügte. es schien mir deshalb wichtig, dieses handwerk fortzusetzen und die montage des alios messers durchzuführen. hier erhält jedes messer seinen individuellen und einmaligen charakter zu verleihen. christian moulin
